Easy Chia Biscuits

Yummy treats that are healthy

I love sprinkling Chia seeds on morning breakfast smoothies or soaking overnight in either water or coconut milk to have with berries as an afternoon snack. They're small in size but pack a punch as chia seeds are full of important nutrients. They are an excellent source of omega-3 fatty acids, rich in antioxidants, and they provide fibre, iron, and calcium. That's why I like adding them into dog treats and biscuits. Here's a simple, easy recipe with ingredients you will probably have on hand. 

Ingredients
  • 2 cups wholemeal flour

  • ½ cup unsalted peanut butter*

  • 2 free range eggs, lightly beaten

  • 2 Tbs Chia seeds

  • ¼ cup water

Method

Preheat oven to 180 C
Line a flat baking tray with baking paper.
Mix all the ingredients together in a large bowl until combined.
Add water until it becomes wet enough to form a dough.

Lightly dust kitchen bench with flour. 
Roll out with a rolling pin, dust lightly with extra flour if it sticks.
Use a medium or large cutter and cut cookies out.
Place on to the prepared baking sheet leaving 1cm between each biscuit.
Bake for 20 – 25 minutes or until cooked through.
Store in an airtight container and use within two weeks

* good quality peanut butter can be found in health food stores. You could make your own if you have the patience and a heavy blender/food processor.
